Perfect sharpening made easy,
There’s not really a lot to say. What’s the point of having brilliant blades costing £100s of pounds and then ruining them with a bad sharpener? This products will resharpen blunted knives, though it might take a bit of a while to do this for a really badly abused knife. When resharpened, we find that with decent Japanese knives, used regularly, we need to re-sharpen about once every two months or so, and hone once a week to keep a perfect cutting edge.
Although it’s designed for “Asian” (ie Japanese) profiled knives, because with their harder steel, they can be sharpened to 15 degrees on each side, it can perfectly well re-profile and sharpen the more obtuse angled western knives (normally sharpened to 20 degrees. However if the steel isn’t good enough to take it, they will need more frequent re-sharpening. In fact Chef’s choice also make sharpeners for 20degree knives and even multi-angled sharpeners, though these are a lot more expensive.
The really impressive thing about this tool is that it is so quick and easy to use, when used to maintain an edge on sharp sian knives. A couple of strokes once a week and the knife is like new again. WELL worth the cost, which is more or less comparable with that of one decent Japanese knife.
